Ingredients:
- 4 large russet potatoes
- 4 cups of vegetable oil (for frying)
- Salt (to taste)
- Optional: garlic powder, paprika, or other seasonings
Instructions:
- Prepare the Potatoes:
- Wash and peel the potatoes.
- Cut them into even strips, about 1/4 inch thick. You can also use a mandoline slicer for uniform cuts.
- Soak the Potatoes:
- Place the potato strips in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps them become crispy when fried.
- Dry the Potatoes:
- Drain the soaked potatoes and pat them dry thoroughly with a clean kitchen towel or paper towels. The drier they are, the crispier your fries will be.
- Heat the Oil:
- In a deep fryer or a large, heavy-bottomed pot, heat the oil to 325°F (165°C).
- First Fry (Blanching):
- Fry the potatoes in batches, being careful not to overcrowd the pot. Fry them for 3-4 minutes until they are light golden and soft but not browned.
- Remove them from the oil and let them drain on a paper towel-lined tray. Let them cool for at least 10 minutes.
- Second Fry (Crisping):
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again in batches, this time for 2-3 minutes or until they are golden brown and crispy.
- Remove the fries and drain them on fresh paper towels.
- Season and Serve:
- Immediately season the hot fries with salt. You can also add your favorite seasonings like garlic powder, paprika, or herbs for extra flavor.
- Serve hot with your favorite dipping sauces.
Enjoy your crispy, homemade French fries!
