Homemade French Fries

Fries and Dipping Sauce

Ingredients:

  • 4 large russet potatoes
  • 4 cups of vegetable oil (for frying)
  • Salt (to taste)
  • Optional: garlic powder, paprika, or other seasonings

Instructions:

  1. Prepare the Potatoes:
    • Wash and peel the potatoes.
    • Cut them into even strips, about 1/4 inch thick. You can also use a mandoline slicer for uniform cuts.
  2. Soak the Potatoes:
    • Place the potato strips in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps them become crispy when fried.
  3. Dry the Potatoes:
    • Drain the soaked potatoes and pat them dry thoroughly with a clean kitchen towel or paper towels. The drier they are, the crispier your fries will be.
  4. Heat the Oil:
    • In a deep fryer or a large, heavy-bottomed pot, heat the oil to 325°F (165°C).
  5. First Fry (Blanching):
    • Fry the potatoes in batches, being careful not to overcrowd the pot. Fry them for 3-4 minutes until they are light golden and soft but not browned.
    • Remove them from the oil and let them drain on a paper towel-lined tray. Let them cool for at least 10 minutes.
  6. Second Fry (Crisping):
    • Increase the oil temperature to 375°F (190°C).
    • Fry the potatoes again in batches, this time for 2-3 minutes or until they are golden brown and crispy.
    • Remove the fries and drain them on fresh paper towels.
  7. Season and Serve:
    • Immediately season the hot fries with salt. You can also add your favorite seasonings like garlic powder, paprika, or herbs for extra flavor.
    • Serve hot with your favorite dipping sauces.

Enjoy your crispy, homemade French fries!
